We take the same care, attention and respect over our butchery as we do our live animals. Native breeds that thrive in our British countryside are grown or sourced locally to guarantee the best quality, time and again.

We consider it vital that all our meat is hung to age properly so we mature everything in our on-site cold store in order to tenderise the meat and greatly develop its flavour.

Native breed beef

WELL-RAISED, WELL-MARBLED BEEF DRY AGED ON SITE

Our beef is amongst the finest in the world. We raise and select from native breeds and their crosses to ensure good carcass confirmation and good fat levels. All our beef is then dry aged for 35 days or more on site until it is ready for butchery and then, finally, eating.

Hand reared pork

OUR EXTRAORDINARY TAMWORTH PORK

We use only our own-reared Tamworth pigs to produce our pork. The high degree of marbling found in Tamworth pork – similar to that found in good beef – adds an extraordinary depth of flavour and succulence. The flavour is deep, rich and unique and the skin is firm and fantastic for crackling.

Locally raised lamb

Local lamb of the best quality

We work with a number of neighbouring farmers and shepherds throughout the year to source our lamb. Different flocks are lambed throughout the spring and early summer to ensure we get a reliable supply of consistently great lamb all year round.

Free range chicken

Slowly grown, high welfare birds

We source our chicken from Nigel and Stewart at Springfield poultry where they raise birds in proper free-range conditions. A forward thinking long-established family farm, they share our high standards and principles in producing top quality birds.
